Sloppy Joe’s originally consisted of ground beef, onions, tomato sauce or ketchup, and other seasonings, served on a hamburger bun.

Try this Daniel Plan version of an American classic.

4-6 servings

 

Ingredients:

2 tablespoons vegetable oil
1 pound ground turkey, beef, or lamb
½ cup diced onion
½ cup diced green pepper
3 cloves garlic, minced
1 tablespoon Dijon or yellow mustard
1 tablespoon chili powder
¼ cup organic ketchup
1 can (15-ounce) no-salt-added tomato sauce
1 tablespoon organic BBQ sauce
2-3 drops of liquid Stevia for sweetness (optional)
Parmesan cheese (omit for Dairy Free)
Whole grain or gluten-free buns (or try using 4-6 Zucchinis, see notes below)

Instructions:
1. Heat oil in a large frying pan over medium heat.
2. Brown raw turkey, onion, and green pepper.
3. Add all the other ingredients and mix well. Bring to a boil. Turn down heat to a simmer. Cover and simmer 30 minutes.
4. Serve on toasted buns.

Here’s a twist! Try stuffing a zucchini with the Sloppy Joe mix. Simply cut a zucchini in half lengthwise, scoop out the seeds with a spoon to make a “canoe.” Top it off with a bit of parmesan cheese, and bake it in a 400º oven till golden brown.
